Leftover Lunch

Ok,for some reason me and the webmaster are starving.
Could be the early morning run(me not him,yet)  or just one of those days when we have a bigger appetite.I just did a quick reckie in the fridge and found not a lot to play with.So with the help of leftovers and a little freezer digging I came up with this.King Prawn,Mushroom & Vegetable Medley with Brown Rice.We've just scoffed the lot and boy was it tasty.Very healthy and packed full of vitamins & minerals it is in keeping with my exercise program.We've just rolled back to work and are now nursing a Pukka ginger and galangal tea.It's a great herbal tea to help digest meals.Anyway here is the recipe for our fabulous leftover lunch.
1 onion
1 clove of garlic
1 stalk of celery
1 small chilli deseeded(throw in the seeds if you prefer more heat)
2-3 slices of fresh ginger(1/2 teaspoon groung)
10-12 sliced mushrooms
1 carrot sliced thinly on an angle
4 spears of broccoli
Cooked king prawns(I bought these reduced a few weeks ago & shoved them in the freezer)
handful of cashews
2 tablespoons soya sauce
2 tablespoons honey

In a wok heat some olive/sunflower oil on a medium to high heat.Cook onions,garlic,ginger,chilli & celery first for 2 minutes.Add the mushrooms & carrots and cook for another 2 minutes.Stir in the honey & soya sauce.Finally add the broccoli,prawns & cashews.Stir well and cook for another 2 minutes.Take off the heat and cover until ready to serve.You could cook some rice noodles to go with this dish but I used some leftover brown rice.Enjoy!
