Bacon & Butter Beans

This is gorgeous.
Enjoy a big bowl of it or serve it as a fab side dish.

  • 8 slices of streaky bacon or pancetta
  • olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • Maldon Sea salt
  • 2 tins Butter beans drained
  • 1/2 apple chopped
  • 1 tablespoon honey
  • 3 tablespoons cider vinegar
  • Pinch fresh black pepper
  • Feta cheese to crumble(if you like feta)

  • To start...
    Heat a tablespoon of olive oil in fry pan.
    Cook bacon until cispy and set aside.
    Put another tablespoon olice oil in to pan and start to cook the onions & garlic until softened and lightly browned.
    Heat pan of water and warm butter beans up. Drain well and place in large serving dish.
    Add the honey, apples and vinegar to the onion mixture, mix in pan and cook for another minute on a medium heat.
    Pour this mixture over the waiting butter beans.
    Break up the bacon into small pieces and scatter over the dish.Crumble the feta over the top.Enjoy!
