fusilli is about £.90 and a jar of Sacla Pesto sauce is £2.09 plus a few pence for some grated cheese and ripped basil over the top. Now I know the pesto is not hand made and lovingly created but at the moment Pine Nuts are expensive and this is my Frugal dish. Perfect for lunch boxes-( my 5 year old informed me she was tired of sandwiches) lunches and main meals. This is a vegetarian dish with lots of garlicky and sun dried tomato flavours- sometimes I add a few sauteed mushrooms and sliced cherry tomatoes to give it even more texture and flavour. Simple food that goes a long way and just four ingredients to feed four people!
3/4 of a bag of whole wheat pasta
1 Jar Sacla Sun dried tomato pesto sauce
small piece of cheese for grating
5-6 fresh basil leaves
Place pasta in large pot of boiling water until cooked-generally 15/20 minutes. Drain well. Stir in whole jar of pesto sauce and mix well so all pasta is coated. Sprinkle grated cheese on top along with a few ripped basil leaves. Season with freshly milled black pepper. Enjoy!
