Chicken and Avocado Salad

Sensational spring salad-Grilled chicken, lime and avocado in a taco bowl- or wrap. Healthy and nutritious with a real zing of lime!

Serves 2

Ingredients:
1 chicken breast
1 avocado peeled and sliced
a few sprigs of fresh coriander
Juice of 1 fresh lime- save a few slices for garnish
shredded lettuce
7-8 cherry tomatoes sliced
drizzle extra virgin olive oil
2 taco bowls or 2 wraps



Prep...

Grill the chicken breast until juices run clear and let it rest for a few minutes. Slice it on the diagonal. Take taco bowl or wrap (if using wrap place it in a bowl to get the bowl shape) and add shredded lettuce, tomatoes, avocados and sliced chicken breast. Drizzle with lime juice and olive oil and place coriander garnish and lime
