Feed a Family of Four under a Fiver

 

Feed a family of four for under a fiver tonight with the help of Quorn meatless meatballs, quick cooking fresh tomato sauce and corn spaghetti pasta. The non-meat balls are surprisingly moist and rather delicious in a homemade pasta sauce. I bought 3 packets of Quorn products for £5.00: mince, mock chicken strips (to go in my coconut soup dish) and the no-meatballs. I like to use corn pasta (especially when on sale) instead of wheat pasta to give the digestive tract a break-too many wheat based foods can cause bloating and digestive problems. I normally serve this as a main meal but sometimes it can be used as a lighter dish with a side salad or even a cheap lunch. This frugal and versatile dish makes a satisfying supper and it’s popular with my gang -plus it’s real quick to cook so it saves on gas and electric.






Here’s how to feed 4 under £5.00


1 packet of meatless meatballs £1.66
1 packet of corn pasta £1.50
2 tablespoons olive oil £.15
Pinch of salt ( Maldon is the best and a little goes a long way) £.05
1 large onion finely chopped £.10
1 clove garlic finely chopped £.05
1 tablespoons tomato puree £.05
1 tin tomatoes £.33
1 vegetable stock cube £.16
250ml passata £.35
6-8 cherry tomatoes cut in half £.25
sprinkling of cheese (optional) £.25
Total £4.90

Prep...
Fill a large pan with plenty of water and bring to the boil. Follow directions for pasta cooking as per pack.
In a large frying pan heat the olive oil and start cooking the onions and garlic. Saute until lightly browned and add the tinned tomatoes, passata, tomato puree and crumble in the stock cube. Mix well and continue cooking over a medium heat until the sauce thickens and reduces a bit. Season with sea salt to taste and add the meatfree meatballs. Place them gently in the sauce, cover with a lid and reduce heat to simmer for about 20 minutes. The no meatballs will steam in the sauce so they will stay nice and moist.
Drain the pasta well and you can give it a little drizzle of olive oil to keep it from sticking together. Plate up pasta and spoon over meatless meatballs and sauce. I divide the food up between big and little appetites to make sure everyone has enough. Sprinkle with cheese if you like and place a few halves of cherry tomatoes on top. Serve it nice and hot. Enjoy!
