King Prawn Sarnie

There’s nothing like a bunch of King Prawns and some fresh peppery watercress stuffed between two pieces of good bread. I like to use toasted seed bread to provide some extra fibre and plant omegas but you can use what you like. This type of sandwich has lots of texture and crunch and it’s simplicity is what makes this one of my absolute favs. King prawns are juicy and large so only a few are required to make this little beauty. A few go along way………

4-5 cooked King Prawns
1 handful fresh watercress
2 pieces of seed bread
1 tablespoon mayonaise
1 teaspoon lemon juice
sea salt and freshly ground black pepper to taste

Roughly chop the prawns up and mix in the mayo and lemon juice. Season with salt and pepper. Toast the bread then butter it, layer on the prawn mixture and place watercress on top of one slice. Add the other toast lid and cut in half. Enjoy!
