Lentil, Feta and Sundried Tomato Salad

Make a cheap and easy, great tasting salad with lentils, tangy sun-dried tomato, fresh sweet cherry tomatoes and creamy feta cheese. Super healthy salad as lentils are packed full of fibre and vitamins and minerals. Lentils- a low fat legume provide texture and can take condiment flavours very well. Eat it on it’s own or serve over a mix of lettuce leaves. I like to add some flat leaf parsley for blood cleansing and extra nutrients.




Ingredients:
1 tin of cooked lentils- drained
4-5 slices of sun dried tomato roughly chopped
4-5 cherry tomatoes cut in 1/2
1/2 pack of Greek feta cheese
tablespoon extra virgin olive oil
tablespoon balsamic vinegar
sea salt & pepper to taste
fresh flat leaf parsley
1/4 of a cucumber chopped
mixed salad leaves

Preparation Time: 5 minutes

Preparation:
Place the lentils, sun dried tomatoes, cherry tomatoes, olive oil and vinegar and mix well. Crumble the feta in and give it a gentle stir. Season with salt and pepper. Arrange mixed leaves and cucumber on a plate and spoon over the lentils. Rip flat leaf parsley and sprinkle over top. Enjoy!
